BAKED VEGAN TOFU SCRAMBLE RECIPE

Tofu Scramble is a popular vegan recipe because it’s easy, tastes delicious and resembles scrambled eggs. It’s also versatile because you can adjust the spices and vegetables to your liking.

This recipe for tofu scramble is different because it’s baked with potatoes on the same baking sheet. One baking sheet=less dishes. I’m not sure about you, but I like minimal mess and clean up. Try this recipe for a high-protein plant-based meal that is quick to make!

The main ingredients for this tofu scramble are pretty simple. It’s the spices that really add the flavour. A couple of key ‘spices’ are turmeric and nutritional yeast. Turmeric gives it a yellow colour and nutritional yeast gives it a cheesy taste plus adds a good serving of B12.

Tofu doesn’t take long to cook so make sure that your potatoes are cut small. That way, they will cook faster and you don’t overcook the tofu. Also, the larger the baking tray, the better, so that you have more room to mix things around.

I love that it only takes one baking sheet for this meal! It’s perfect for weekend brunch or prepping meals for the week.

    Baked Vegan Tofu Scramble Recipe:

    Ingredients

    • 15 oz Extra Firm Tofu

    • 200 grams Yellow Potatoes, ¼-inch diced

    • 2 Bell Peppers, diced

    • ½ Red Onion, diced

    • Cooking Spray or Olive Oil

    • 3-4 tbsp Nutritional Yeast

    • 2 tsp Garlic Powder, divided

    • ¼ tsp Onion Powder

    • ¼ tsp Turmeric

    • ¼ tsp Paprika

    • ¼ tsp Oregano

    • ¼ tsp Salt, divided

    • ¼ tsp Black Pepper, divided

    • Chopped Spinach (Optional)

    • ¼ cup Vegan Cheddar Shreds (Optional)

    • Handful Baby Tomatoes (Optional)

    Method

    1. Preheat oven to 450F. Spray baking sheet with oil, or use tinfoil if you prefer.

    2. Drain as much liquid as you can from the Tofu, I just squeeze it out with my hands. Then, using your hands, crumble the tofu directly onto the baking sheet.

    3. Sprinkle the Nutritional Yeast, 1 tsp Garlic Powder, Onion Powder, Turmeric and some Salt and Pepper over the tofu. Mix to combine the spices and tofu then move to one side of the baking sheet.

    4. Add your Diced Potatoes to the other side of the baking sheet. Next, add your Diced Peppers and Red Onion. Spray vegetables with cooking oil. Sprinkle the remaining Garlic Powder, Paprika, Oregano, and Salt and Pepper over the vegetables. Keeping the tofu and vegetables on their own sides, mix the vegetables on one side of the baking sheet.

    5. Bake on the middle rack for 15 minutes then take the baking sheet out and stir the tofu and vegetables, on their respective sides. Optional: Sprinkle vegan cheddar and baby tomatoes on the scramble. Bake for 10 more minutes.

    6. Remove from the oven and make sure the potatoes are cooked through.

    7. Serve immediately or store in containers for meal prep. Optional: Add chopped spinach. Enjoy!
